Cinnamon

Cinnamon from Indonesia is a spice with exceptional healing qualities. It is obtained from the rich shoots of the cinnamon tree. The bark from the shoots is removed so that only the inner husk remains. This husk then rolls up by itself during drying and so becomes the familiar cinnamon stick. What is special about these cinnamon sticks? They only release their full flavour when they are cooked - so they are ideal in Jules Destrooper biscuit dough!

Summer butter

What are summer and winter butters? The answer to this question may be arbitrary, but summer butter is essentially made from the milk of cows that graze in the summer. 

Winter butter is made with the milk of cows that remain indoors in winter and who eat silage. The feed influences the composition of the milk and the fatty acids in it. Summer butter contains more soft fats, making it creamier and softer. Moreover, grass gives butter a vibrant yellow colour. In winter, butter is paler, harder and its taste is less pronounced as it contains more hard fats.

The milk of the Irish butter that Jules Destrooper uses is sourced from Southwestern Ireland. The cattle are Holstein Friesians and belong to a black and white breed known for their high melk production .  Ireland has a moderate maritime climate, and doesn't experience frigid winters or hot summers. That means their cows can graze outdoors the whole summer long.

Belgian milk chocolate

Jules Destrooper only uses the very best Belgian chocolate. Barry Callebaut even created a unique recipe for us. With cocoa beans from America, Africa and Asia (all with the UTZ label, the quality mark for sustainable agriculture), which combine to create a very specific flavour. First we carefully weigh all the ingredients, after which they are mixed into the delicious chocolate which makes our biscuits taste so good.
