Melt the white chocolate in a bain marie to obtain a white ganache (similar to a chocolate mousse). Once melted, mix in the cold butter. Pour the mixture into a piping bag. Place the Almond thins covered in dark chocolate on a plate and then pipe three little dollops of white ganache onto it. Garnish with the fresh raspberries.
