Ginger Thins with Bruges Dentelle cheese, mango and gherkin

Preparation
Cut the mango and gherkins into small cubes and mix with a dash of white wine vinegar.
Cut the Bruges Dentelle into slices and place in the centre of the Ginger Thin.
Place a spoonful of the mango and gherkin mixture on the cheese. Finish with a sprinkle of smoked paprika powder.
