Preparation
In a bowl, beat the egg whites until stiff. In a separate bowl (preferably using a hand mixer or food processor), cream the yolks and sugar together until you achieve a smooth, mousse-like texture. Gradually add the mascarpone, while continuing to mix. Once you have a smooth mixture, fold in the beaten egg whites.
Dice the apples and pears into small cubes, before mixing with the juice of 1 lemon.
Crumble one dark chocolate-coated Butter Crisp into each serving glass. Then spoon in the mascarpone. Top with the diced apple and pear. As a finishing touch, garnish each glass with one dark chocolate-coated Butter Crisp. Enjoy straight away or leave to rest in the fridge for 1 to 2 hours.
