Carrot cake with Butter Crisp icing

Preparation
Preheat the oven at 180 °C (350°F).
Mix the eggs and sugar in a large bowl.
Melt the butter for a few seconds in the microwave and add to the mixture with the milk.
Add the flour, baking powder, salt and cinnamon.
Mix well and add the carrots with a wooden spoon.
Bake in the oven for 40 minutes, or until you can insert a knife into the centre of the cake and it comes out clean.
Leave the cake to cool at room temperature before preparing the icing.
When the cake has completely cooled down, mix the icing sugar and water in a small bowl and pour over the top of the cake.
Cut up 4 Butter Crisps into small pieces and sprinkle over the top of the cake.
