Almond Thin with cherry tomatoes, mozzarella and Ganda ham

Mix the mozzarella with a little of the liquid, and add salt and pepper to taste. Cut the cherry tomatoes in halves and put them in an oven dish with some olive oil, salt, pepper and a little sugar. Cook the tomatoes in a preheated oven at 180°C. Place the Almond Thins on an oven tray and leave it in the oven for a couple of minutes. Cut circles from the Almond Thins and leave them to cool.
Place a few tufts of mozzarella mousse on a plate and arrange the tomato halves in between them. Place the strips of Ganda ham on the plate, and finish with the Almond Thins and a few sprigs of the fresh dill.
