Make a zest from the orange peel and squeeze the orange. Finely chop some cilantro.
Cut the cod into a fine tartare and season with olive oil, pepper, salt, cilantro, lime juice and orange juice. Boil the orange zest together with orange juice. Mix a bit of the zest with the cod tartare.
Spoon the tartare into four glasses, crumble over the Almond Thins and garnish with orange zest.
